Yummy Food

I have recently talked with a few moms who feel keeping their child on the diet is to hard.. or that they will not be getting enough nutrients. I would like to share with you what my daughter eats on a typical day.
Breakfast
1. cereal, pancakes, waffles..
Lunch
1. Chicken nuggets, tuna patty's, hot dogs, (leftovers from dinner sometimes) ;)
with some veggie and fruit..
Dinner
1. Meat loaf, chicken and dumplings, hamburgers,
chili, ... potato and a veggie again..
Snacks..
wow.. I love .. love .. love a good muffin.. so I try to mix up some often. For snacks Lacie would have
fruit, muffins, cake, cookies, chips, nuts, ....
NOTICE anything?? .... its the same food your feeding your kid right now.. The only difference is
the way the food is affecting your child.

I know you want the best for your child! So do I.. =)
Cooking gluten/casein free is not has hard as you might think! Here is a list of the items I use to cook with.

To make the chicken nuggets I use Orgran all purpose rice crumbs, one egg, salt, pepper, and one can of hormel chicken white meat. I mix them all together make them into the shape of a chicken nugget and put in on my all ready warm skillet ... I use extra virgin olive oil... brown on both sides an YOUR DONE.. wow.. I know..

For my basic all purpose flour I use a mixture of differnt things.. IF your new at this.. I would not suggest you buy the all ready to use flour.. One its expensive two they taste like crap!
I use
2 cups millet flour
1 cup sorghum flour
1 cup cornstarch
1 cup potato starch
1 cup tapioca flour
This flour blend is the best I have ever tasted!!! I got it from a cookbook called Gluten-free baking classics by Annalise g. Roberts
You will definitely want to pick this up!! Because she will tell you how much Xanthan Gum you will need for each recipe.
